Zutaten (für ca. 4 Portionen): 1,5 kg Short Ribs vom Rind 1 gehäufter EL Butterschmalz Salz und Pfeffer zum Einreiben 1 Zwiebel, grob gehackt 3 Knoblauchzehen, grob gehackt 1 gehäufter EL Tomatenmark 1 TL zuckerfreier Dijon-Senf 4 Stück Parmesan-Ränder (à ca. 15 g) 800 ml Rinder-Knochenbrühe 1,5 EL Apfelessig 1 TL Paprika rosenscharf 1 TL schwarzer Pfeffer 1 TL Koriander, gemahlen 1 TL Salz (nach Geschmack anpassen) 4–5 Lorbeerblätter Frühlingszwiebeln & frischer Dill zum Servieren Zubereitung: Short Ribs mit Küchenpapier trockentupfen. Großzügig mit Salz und Pfeffer einreiben. Butterschmalz in einem ofenfesten Bräter bei hoher Hitze schmelzen. Short Ribs rundherum kräftig anbraten (ca. 2–3 Minuten pro Seite), bis sie schön gebräunt sind. Herausnehmen und beiseitestellen. Zwiebel im Bratfett anbraten (ca. 3–4 Minuten). Dann den Knoblauch zugeben und kurz mitrösten, bis er duftet. Tomatenmark einrühren und 2–3 Minuten anrösten. Senf hinzufügen und gut vermengen. Short Ribs zurück in den Bräter geben. Parmesanränder dazulegen. Mit Knochenbrühe ablöschen, Apfelessig hinzufügen. Mit Paprika, Pfeffer, Koriander, Salz und Lorbeerblättern würzen. Deckel auf den Bräter setzen. Im vorgeheizten Ofen bei 160 °C Umluft (oder 180 °C Ober-/Unterhitze) für 3 bis 3,5 Stunden schmoren lassen, bis das Fleisch butterzart ist und sich die Knochen von selbst lösen. Vor dem Servieren mit frisch geschnittenen Frühlingszwiebeln und Dill garnieren. Tipp: Das Keto Gericht lässt sich super vorbereiten und hält sich im Kühlschrank bis zu 4 Tage.
