Mediterranean Baked CodFresh, simple, and bursting with flavor!
Ingredients:
• 1 medium purple onion, sliced into half rings
• 1/2 cup (80g) green olives, pitted
• 1/2 cup (80g) black olives, pitted
• 2 tbsp (20g) capers
• 1 cup (150g) cherry tomatoes, halved (plus extra sprigs for garnish, optional)
• 1 tsp dried oregano
• 1 tbsp olive oil (plus extra for drizzling)
• 4 cod fillets (about 6 oz/170g each)
• Salt & pepper, to taste
• 2 garlic cloves, unpeeled, lightly crushed (optional)
Instructions:
1) Preheat oven to 400°F (200°C).
2) In a bowl, mix onion, olives, capers, halved cherry tomatoes, oregano, and 1 tbsp olive oil. (No salt here—capers add plenty!)
3) Spread the mixture in an oven-safe dish.
4) Season cod with salt and pepper, then place on top. Add garlic cloves and optional cherry tomato sprigs for flair.
5) Drizzle with olive oil.
6) Bake for 15-18 minutes, until the cod flakes easily.
7) Serve hot and enjoy the aroma!
Tip: The garlic peel adds a subtle flavor without overpowering the dish.

Number of calories burned in (any) workout is very much depends on your body composition, your fitness level and how you perform the movements. It is individual to each person and therefore it's hard to tell exactly how many calories you burn. HOWEVER, aqua aerobic workouts like this have the potential to burn a lot of calories (a few hundreds). Make sure to do your best when performing your aqua workout ... use powerful movements, push hard against the water with your arms and legs and don't forget to use your core muscles ;) I would also recommend wearing shoes to give you a good traction and better leverage when pushing off the pool bottom.
