Smash Burger Taco's - 475 Calories 33.5 Protein 16.65 Carbs 29.06 Fat
Ingredients:
4oz 90% lean ground beef (use leaner % for lower cals)
28g American Cheese
(2) Zero carb tortillas
30g light mayo
50g russet potatoes
Grilled onions
Directions:
For the Burgers -
Weigh out 2oz of meat per patty. Form into a ball. Season with smash burger seasoning.
Add to skillet and put a tortilla on top and then use a spatula to smash it as flat as you can!
Once mostly cooked flip over and add cheese.
After cooked I put them into a taco holder so that form into a taco shape.
For the Sauce -
The only thing I weighed out and tracked is the mayo. I basically eyeballed the rest to taste.
Mix together a 1/4 cup of light mayo, and then a little bit of following; Mustard, Pickle Relish, White Wine Vinegar, Smoked Paprika, Salt and Pepper.

For the Fries -
Wash those dirty potatoes! lol I tossed with Olive oil, Garlic powder, Onion powder, salt, pepper and smoked paprika. Baked at 400 for about 25 minutes.
Chicken Thigh Bowls - 357 Calories 30.27 Protein 26.79 Carbs 15.23 Fat
Ingredients:
85g Chicken Thighs
43g lettuce
1/3 cup coconut jasmine rice
35g black beans
32g queso quesadilla cheese
18g sour cream
Cholula hot sauce
Directions:
Easy peasy! I just used fajita seasoning and smoked paprika on the chicken and baked in the oven at 400 for about 25 minutes then assemble your bowl!
Queso Chicken Enchiladas - 417 Calories 55.43 Protein 45.96 Carbs 13.23 Fat
This recipe is for a serving of 2 enchiladas. It makes a total of 6.
Ingredients:
16oz chicken
(2) wedges of laughing cow light
1/2 cup nonfat greek yogurt
30g salsa
6 carb balance wraps
7 tablespoons of queso blanco (1 inside mixture and 1 on each tortilla after they are rolled up)
28g quesadilla cheese for the top
8g cheese its crushed for the top
For the Chicken Filling -
I cooked 16oz of chicken with minimal seasoning. Just a little of the basics. Salt, pepper, garlic, onion, smoked paprika. I then cut it up to smaller pieces. Add it to a bowl and mix it with the laughing cow, greek yogurt, salsa and only 1 tablespooon of the queso. Divide evenly between 6 tortillas and roll.
For The Topping -
Add around a tablespoon of queso on to each enchilada.
Top with cheese and crushed cheese its. Bake on 375 for 20-25 minutes.
Freezer Night Wraps - 499 Calories 28.6 Protein 30.8 Carbs 26 Fat
Ingredients:
3oz Just Bare Lightly Breaded Chicken Chunks
(1) La Banderita Carb Counter wrap
30g light mayo
30g pickled jalapenos
28g queso quesadilla cheese
51g sweet potato fries
Directions:
I air fry the chicken according to package and assemble the wrap :)
Teriyaki Chicken - 304 Calories 31.51 Protein 38.69 Carbs 3.44 Fat
This recipe is for (3) equal servings
Ingredients:
12oz chicken tenderloins
38g La Choy Teriyaki
5g sesame seeds
1 bag of basmati rice
12oz green beans
Directions:
For The Chicken -
I seasoned the chicken with salt, pepper, garlic powder, onion powder and ginger. Then I added the teriyaki sauce. I used about one/two more tablespoons of teriyaki after it was done cooking and topped with sesame seeds.
For the Green Beans -
Tossed in olive oil, garlic, salt, pepper, smoked paprika and sautéed until tender.
For the Rice -
I added about one teaspoon of low sodium soy sauce.
P.s. I drizzled with Lee Kum Kee Sriracha Mayo and it was lovely. Highly recommend.
